Not all cocoa powder is the same! Natural unsweetened cocoa powder (the most traditional choice) is acidic and works with baking soda to help baked goods rise, while Dutch-process cocoa powder has been treated to neutralize the acidity, giving it a milder but more robust flavor and darker color. Choose quality chocolate for melting

When melting chocolate for ganache, truffles, or frosting, always start with real chocolate that contains cocoa butter. Chocolate chips often contain additives to help them hold their shape during baking and won’t melt as smoothly. When in doubt, check the ingredient list! My favorite brands are Bakers, Ghiradelli, Guittard, and Callebaut. Also, the higher quality chocolate you use will create a higher quality finished product!

Store chocolate properly

Keep chocolate in a cool, dry place away from strong odors, like in a pantry (and not the fridge or freezer). Chocolate can absorb flavors from other foods, so store it in an airtight container if possible! Try to use within a year for peak freshness and flavor.
