These loaded up baked potato bites are one of the best things to happen to my snack lineup in a long time, and for good reason! They’re everything you love about a baked potato piled high with all the toppings, just in a bite-sized package.

Set out a platter on game day, for holiday parties, or the next time you have friends over, and watch how quickly they disappear! 

These are definitely a family favorite for football season!  Really really, good. Ingredients you’ll need

These potato bites are a breeze to put together! They take about 45 minutes total to make and require just a handful of ingredients. Here’s what you’ll need to grab from the store:

  • Russet potatoes, for that classic baked potato flavor
  • Salted butter
  • Salt and pepper
  • Shredded cheddar cheese, or other cheeses as desired
  • Sour cream
  • Cooked bacon (I have baking instruction below)
  • Green onions/scallions

How to make these loaded baked potato bites

  • Slice and prep potatoes. Slice into 1/2-inch rounds and toss with butter, salt and pepper.
  • Bake potatoes. They’ll need about 30 minutes in a 400°F oven, flipped halfway through. They should be softened and lightly golden brown.
  • Prep toppings. While the potatoes bake, have everything else ready to go: shred the cheese, cook the bacon and chop green onions.
  • Add cheese. Sprinkle with cheddar cheese and return to the oven for a few minutes to melt the cheese.
  • Finish with remaining toppings. To each round add a dollop of sour cream, some bacon and chives, and a generous sprinkle of salt and pepper.
  • Enjoy! These loaded baked potato bites are best served right away while they’re hot and fresh.

Make ahead instructions

This recipe is best served while hot and fresh, but you can do some prep work ahead of time to make easier work for yourself later (perfect if you’re hosting a party, or taking these on the go to an event).

  • Prep toppings in advance: Cook bacon, shred cheese and slice scallions up to 5 days in advance and store separately in the fridge until you’re ready for them.
  • Par-cook the potatoes: Bake them as directed until they’re almost done, about 20-25 minutes. Then cool and store in an airtight container in the fridge for 1-2 days.
  • Finish potatoes and serve: When you’re ready, return the potatoes to a sheet pan, finish baking, and then proceed with recipe as written.

How to bake bacon in the oven

This is my favorite way to make bacon! It’s less messy and the bacon cooks more evenly.

  1. Line a sheet pan with foil (it makes cleanup so much easier!) and spread bacon into a single layer.
  2. Bake at 375°F for 15-20 minutes until it’s done to your preferred level of crispiness.
  3. Transfer to a paper towel-lined plate to soak up excess grease.

Ingredients
 

  • 1 lb russet potatoes , sliced 1/2 inch thick
  • 3 tablespoons salted Challenge Butter , melted
  • Salt and pepper
  • 4 ounces shredded cheddar cheese (about 2 cups)
  • 4 slices cooked bacon , chopped
  • ½ cup sour cream
  • 3 green onions , sliced

Instructions
 

  • Preheat oven to 400°F. Line sheet pan(s) with parchment paper or foil.
  • In a large bowl toss potatoes in the butter until well coated.
  • Arrange potatoes in a single layer on the sheet pan. You may need more than one pan. Sprinkle generously with salt and pepper.
  • Bake potatoes for 30 minutes or until tender, flipping once halfway through. Baking time may vary based on the size of potato rounds.
  • Top potato rounds with cheese, about one heaping tablespoon per rounds. Return potatoes to the oven for 3-4 minutes until cheese is melted and bubbling.
  • Add a dollop of sour cream, a few pieces of bacon, and some scallions to each potato round. Finish with a sprinkling of ground pepper.
  • Enjoy immediately.
