Sausage, Broccoli, Potato Soup
This hearty and delicious soup is filled with sausage, potatoes and broccoli. It’s easy to make, very adaptable to whatever veggies you have, and it’s the perfect warm and cozy soup for a chilly night!

Is spring acting as fickle in your neck of the woods as it is here in Utah? It’s warm and sunny one day, then freezing and snowy the next. This soup happened for dinner last week on one particular chilly day. I threw it together, grabbing whatever I had in the fridge and it was SUCH A HUGE HIT with the fam that I knew I had to recreate it to share with you.
Ground sausage, onions, garlic, potatoes, broccoli and fresh herbs all go into this cozy and healthy soup. I added a splash of cream at the end to add a little richness and creaminess, but that’s totally up to you. Serve it with a crusty baguette or a dinner roll and you’re all set for a wholesome meal the whole family will love!

Ingredients you’ll need
Here’s everything needed for this soup, though keep reading for variations and substitutions. Full recipe at the bottom of this article.
- Ground pork sausage
- Diced potatoes
- Chopped broccoli
- Chopped onion
- Minced garlic
- Chicken or vegetable broth
- Fresh or dried thyme
- Milk, heavy cream, or additional broth
- Butter
- All-purpose flour
- Salt and pepper

How to make this sausage, broccoli and potato soup
- Prep and chop all ingredients. I find soup so incredibly easy to make when I have everything chopped and ready to go, stove-side.
- Brown sausage. Add to a hot pot or skillet and cook until browned on all sides. Remove and transfer to paper towels to absorb excess grease.
- Cook onions and garlic in butter. Cook the onions first until soft, then add garlic and cook for another minute. Season with salt and pepper.
- Thicken with flour and pour in broth. Stir in flour until it coats all of the onion mixture, then pour in the broth while mixing constantly. (I like to add the broth gradually while stirring, I think it makes for a smoother soup broth in the end.)
- Add potatoes, salt and pepper and thyme. The reduce heat to simmer and cook until potatoes are al-dente soft or almost done, about 15 minutes.
- Add sausage, broccoli and milk or cream. Taste and adjust seasonings as needed, and simmer for a few more minutes until potatoes and broccoli are both fork tender.
- Enjoy! You can serve this soup right away or keep warm over low heat until ready to serve.

Recipe FAQs
You can use whatever kind of ground pork sausage you’d like for this recipe, per your preference. Feel free to use either traditional (sometimes called “breakfast” or “country”) sausage, spicy Italian, or mild/sweet Italian.
Stock is usually made from meat bones, while broth is usually made by simmering meat. Stock will have a slightly richer and more earthy flavor than broth, but they are quite similar and you should be able to use them interchangeably in recipes. If you have a brand or type you like, stick to that. And to make sure your dishes aren’t too salty, start with an unsalted stock or broth so you can control the amount that goes in.
Of course! You can always add additional vegetables or substitute other vegetables in this (and most!) soup recipes. Carrots, spinach or kale, leeks, peas and sweet potatoes are veggies I’ve used in this soup.

Sausage Broccoli Potato Soup
Ingredients
- ½ lb ground pork sausage (226 grams)
- 1 tablespoon butter
- 1 yellow onion , chopped
- 2 cloves garlic , minced
- 1 heaping tablespoon all-purpose flour
- 5 cups chicken or vegetable broth (1200 ml)
- 1 lb potatoes, diced (450 grams)
- 1 teaspoon coarse salt plus more to taste
- About 1/2 teaspoon ground black pepper
- 1 teaspoon fresh or dried thyme
- 1 large head of broccoli , chopped (about 3 cups)
- 1 cup milk or cream, or use more broth (250 ml)
Instructions
- In a large pot brown sausage, about 5 minutes. Transfer to a paper towel-lined plate to drain.
- Add butter to pot along with the onions. Cook onions until soft and translucent, about 5 minutes. Add minced garlic and cook for 1 minute more. Add flour and stir until onions are coated.
- Pour in the broth and add potatoes, thyme, salt, and pepper. Bring to a boil and simmer for 15 minutes.
- Add sausage, broccoli and milk/cream/more broth and return to a boil. Simmer for 3-5 minutes until potatoes and broccoli are tender.
- Taste and adjust seasonings if needed.
Notes
- You can use traditional (“breakfast” or country”) ground sausage, sweet Italian sausage, spicy Italian sausage, etc.
- Use any percentage of milk or heavy cream for this soup to make it more or less creamy to your tastes. You can also substitute the milk/cream for more broth to keep the soup lighter.

A google search of easy dinner with these items lead me to this recipe. It was so good and such a hit for the whole family. My only addition to the recipe was red pepper flakes.Â

Can this recipe be done in a crock pot?
Absolutely! I’d brown sausage, onion and garlic over the stove for better flavor. Then everything can be cooked together in the slow cooker until potatoes are soft, on low for maybe 6-8 hours and high for 3-4. I have not tested it this way so I can’t give specific timing instructions.
I have made this several times and wonder is it possible to freeze this? Â Maybe leave out the potatoes?
Hmm I have not frozen this soup before. Looking through some google searches, it looks like it might not freeze very well with the potatoes since the potatoes will soak up a lot of the liquid. You could puree it first, or leave out the potatoes as you suggested. If you try it, I’d be curious to know how it went!
usually I make broccoli & potato soup by blending it at the end (and don’t add flour or cream, just some 1% milk) But I liked the idea of leaving the veggies in bigger pieces and adding the sausage so tried this recipe. The flour didn’t thicken it up enough to my taste so I added a tsp of cornstarch. overall very nice and thank you for sharing! I will make again

I use ground bulk sausages, but you can also use ground beef, chicken, pork or turkey.
