The good news? With just a few simple tips and techniques, anyone can achieve bakery-style results. 6 tips to make picture-perfect, bakery style cookies

Here’s a quick overview! We’ll go into each tip in much more detail. I always do these 6 things when I bake a batch of homemade cookies:

  2. Start with butter at the right temperature.
  3. Measure flour correctly.
  4. Portion with a cookie scoop and shape into balls.
  5. Garnish with mix-ins on top of the dough before baking.
  6. Re-shape into rounds when they come out of the oven.

1. Pick a good recipe and follow it

I want to start here, because you’re never going to get beautiful bakery-style cookies with a recipe that doesn’t work. Use a reliable recipe from a trusted source. If you’re eager to try something new, consider making a practice batch first to see how it turns out.

Once you have a recipe, be sure to follow it as written! Baking is a precise science, and changing ingredient amounts or substitutions can lead to unexpected results.

2: Start with butter at the right temperature

Why do my cookies spread out and lose their shape?

There could be a few issues, but most commonly flat cookies that spread too much in in the oven is caused by butter that’s too soft.

The temperature of your butter can make or break your cookies! Always use butter that’s truly at room temperature (between 65-70°F), and soft enough to leave a slight indent when pressed, but not shiny, greasy, or so soft that your finger sinks all the way through.

3. Measure flour correctly

Why are my cookies dry, too cakey, or crumbly and not spreading properly?

Most often, the problem is too much flour, usually from measuring it incorrectly.

Scooping flour directly with a measuring cup can pack it down, adding extra flour that dries out your dough. To avoid this, fluff your flour, spoon it into the cup, and level it off. Or better yet, use a kitchen scale for perfect accuracy every time. Find more information on how (and why!) to measure flour accurately here.

How do I get my cookies perfectly round and even?

Start with a cookie scoop, which makes it easy to portion them all the same so they’ll bake evenly. Then roll them into uniform balls.

My favorite way to scoop cookie dough is with a Ā #20 3 Tbsp spring-loaded cookie scoop. In my opinion, this is the perfect amount of dough to get crispy edges and a soft chewy texture inside the middle. If you want smaller cookies, you can use aĀ #40 1.5 Tbsp cookie scoop. If you want XL bakery-style cookies use aĀ #12 1/3c cookie scoop.

How can I make my cookies look like they were baked by a pro?Ā What’s the easiest way to make cookies look more appealing?

Save some of your mix-ins to add on top of each dough ball before baking.Ā Like chocolate chips, nuts,Ā M&Ms, etc. Taking a few extra seconds to artfully arrange chocolate chips or nuts on the surface of each cookie dough ball gives your baked cookies a polished, professional finish.

Tip:Ā Sprinkle flaky sea salt on your cookiesĀ afterĀ baking, not before. This prevents the salt from melting into the dough. We want to see the beautiful crystals on top! (And by the way, adding fancy salt to your cookies is the quickest way to make your cookies look fancy.)

6. Reshape cookies while hot from the oven

Why are my cookies misshapen? How can I get perfectly round cookies?

While the cookies are still hot, gently press them into rounds using a spatula or a round cookie cutter. The cookies are soft and forgiving right out of the oven, so act fast!

If your cookies aren’t turning out how they should, or you want to take extra steps to making your cookies perfect, here are a few more important things to consider:

  • Check your oven temperature: Often they’re not calibrated to be perfectly accurate. Use an oven thermometer (they’re cheap!) to know exactly the temperature of your oven so cookies bake up as they should.
  • Use only light metal baking sheet pans: Dark metal pans will result in darker, overbaked cookies. TheseĀ Nordic Ware aluminum pansĀ are my favorite for baking.
  • Line pans with parchment paper: Do not grease the cookie sheet, as this will encourage cookies to spread.
  • Chill the cookie dough, if needed. Some recipes require chilling, so definitely follow those instructions if given. But you may also be able to save a too-soft cookie dough from spreading in the oven by chilling cookie dough balls on the sheet pan for 15-30 minutes before baking.
  • Cookies look their best the day they’re bakedĀ and I always bake them fresh the day I plan to serve them.Ā To prep dough ahead of time, store cookie dough balls in the fridge for up to a week or in the freezer for a month or more.
