If I had to pick one meal to enjoy all summer long, it would be burgers grilled out in the backyard. You can keep your brats and barbecue chicken, burgers are my one true love.
When Wisconsin Cheese asked me to create a Memorial Day recipe using their cheese of the month, cotija, I immediately thought— burgers! With guacamole. And bacon and grilled onions too, because you can’t have too much good stuff piled on a burger.
You’ve probably mostly used cotija cheese in Mexican dishes— tacos, enchiladas and the like. It’s known the “Parmesan of Mexico” and has a sharp flavor and crumbly texture. But don’t limit yourself to just Mexican dishes, this cheese is the perfect topper for these all-American burgers.
These burgers are so tall you’re going to have a hard time with that first bite, and they’re so, so messy. But isn’t that the sign of a winner?
