Every summer, grilled veggies steal my heart. I will forever be a meat-eater, but I love how fresh, plentiful and delicious summer vegetables are. They certainly don’t need to play a supporting role. I want my veggies front and center!

These sandwiches are perfect for letting whatever veggies you’ve grown in your garden or picked up from your local farmer’s market shine. I used zucchini, red onions, portobello mushroom and red onions, but don’t feel limited to just those options.
