With all of the craziness that has been our life the during the last month, we pretty much had to abandon our regular routine, and I’ve missed it. But now we’ve moved into our new house and things are starting to slow down and return to a new normal.
Hooray!
One of the first things I’m bringing back is lazy weekend breakfasts together as a family.
I cannot wait to wake up on Saturday morning with nothing on the to-do list— nothing to pack or unpack, no urgent errands to run. We’re going to stay in our pajamas till noon, watch cartoons, and enjoy a leisurely homemade breakfast together. This hash brown pie packed with crispy bacon and lots of 100% real, natural cheddar cheese may even end up on our table. It’s one of my new favorite things!
Just look at those crispy edges, the little jewels of bacon, and all that melty cheese—
How can anyone resist that?
I like to serve wedges of this hash brown pie with a simple dollop of sour cream, or a fried egg if I feel like going all out. And if you want to have a little extra fun, try adding veggies to the mix before baking. Peppers, mushrooms or spinach would all be delicious additions.
Happy weekending, enjoy!
Cheesy Bacon Hash Brown Pie
Ingredients
Suggested toppings for serving:
- Sour cream
- Chives
- Additional shredded cheese
Instructions
- Preheat oven to 375°F.
- In a well-seasoned 8 or 9-inch cast iron skillet, cook the bacon over medium heat until crispy and fat has rendered. Transfer bacon to a paper towel-lined plate to drain. Add the onion to the skillet and reduce heat to medium low. Cook until onion is soft and translucent, about 4 minutes.
- In a large bowl, whisk together the eggs, milk, salt and pepper. Stir in the hash browns, cheese, bacon and onion.
- Make sure the cast iron skillet is well greased with bacon grease, and grease with non-stick cooking spray if needed. Dump the hash brown mixture into the skillet and spread it evenly in the pan. Bake until edges are crispy, about 30-35 minutes. Serve immediately.

This pie looks amazing! It would be great for a quick lunch or dinner too. Plus, I can’t wait to know a little more about your new home. (To be honest I searched it on googlemaps ’cause I had never heard about it before and it looks spectacular!)
Xo, Elisa
Love the idea of enjoying this for dinner. Why haven’t I thought of that?
This is a breakfast my boys would love.
This would be great for a dinner, too. My boys will love it!
I tried this recipe this weekend and my entire family loved it. I cook a big breakfast every Saturday for my in-laws and next Saturday, this is going to be on the menu. Thank you for posting it!
Thanks Sandra! So happy to hear you all loved it. 🙂
How well does this refrigerate to make up ahead and warm up later…tyk
I’m going to make this on W then refrigerate and serve Thursday…I’ll let you know if it works….if you’ve already tried how was it?
What modifications would I make if I’m using fresh potatoes? I can’t wait to make this!
This is a great frittata. I cooked O,Brien hash browns to include before combining ingredients. Very good!
It was tasty but I expected it to rise more. Not sure what I did wrong. It sure wouldn’t feed 8 people. I’m going to tweak a bit for next time. I love the idea of it all. – Just seemed like it was missing something.
I love this recipe. I have made it 4 times now and passed the recipe along to my daughter. Easy to put together and turns out great every time.
I’d love to try this but I don’t have a cast iron skillet. How can I make this in something else?
Yes, you can make this in any oven-safe 8 or 9-inch skillet. You can also brown the bacon on the stove in a skillet, but then bake the pie in a pie dish or round pan. A cast iron skillet get the edges nice and crispy so it’s ideal, but not necessary!
