Overbaking or rolling the cake when it’s too cool can cause cracks. Bake just until edges pull away from the pan, and the top bounces back when gently pressed (test several areas with your finger).This ensures it’s soft enough to roll.

Start rolling the cake while it’s still warm and pliable, no more than a few minutes after you take it out of the oven. Have your counter space and supplies all ready to go so there’s nothing slowing you down.
