Peach Apple Galette
Here’s the perfect way to combine summer peaches with fall apples! This easy and delicious peach apple galette recipe is simple to make and a real crowd-pleaser.

This peach apple galette is my favorite dessert to bake in August and September, when peach season is wrapping up, but apple season is just getting started. The combination of peaches, apples, and cinnamon inside a flaky all-butter pastry is so incredibly delicious, especially with a scoop of vanilla ice cream!
This rustic pie has just 6 essential ingredients, and takes just a few minutes to prepare. If you happen to have an extra pie crust in the freezer, it’s especially easy to throw together for any occasion— like an outdoor dinner party with friends, or even just for a treat for any night of the week. This is one of my favorite late-summer desserts to share with guests, they always go crazy for it!

Here’s everything needed to bake this peach apple galette (full recipe at the bottom of the article):

- Single pie crust
- Fresh peaches
- Fresh apples
- Granulated sugar
- All-purpose flour
- Ground cinnamon
- Egg and water, for egg wash
Do I need to peel the peaches and apples before baking?
This is completely up to you! You can leave both the peach and apple skins on for the easiest assembly, but you can also remove them if you don’t like how they look or affect texture (sometimes they bother me, sometimes they don’t!).
To peel the apples: simply use a vegetable peeler to remove skins. To peel the peaches: use a knife to score a small “x” in the bottom of the peaches, then dip them for a few seconds in boiling water. Transfer peaches to a bowl of ice water and use your fingers to peel off the skins starting with the “x” at the bottom.
How to make this peach apple galette
- Roll out pie crust. On a floured surface, roll pie dough out to a rough 12-inch circle. It’s okay if it’s not perfectly circle! Then transfer it to a sheet pan lined with parchment paper.

- Toss peaches and apples with sugar, flour and cinnamon. Combine everything in a bowl, making sure it all evenly coated. Do this only right before assembly, or the fruit will release extra juices and make the pie soggy.

- Assemble the galette. Dump the mixture into the center of the pie crust, leaving the edges clear. Fold the pie crust over the filling in sections. Don’t stress to much about how it looks, this galette is supposed to be rustic.

- Bake. Brush the edges of the pie crust with egg wash and sprinkle with cinnamon. Bake in a 400°F oven for about 30 minutes until crust is golden and filling is bubbling in the center.
- Serve. Top slices with whipped cream or vanilla ice cream, and enjoy!

Tips for making this recipe
- I have a lot of resources for making homemade pie crust! I have a foolproof method for making all-butter pie crust, my favorite buttermilk flavor variation, and I even have a tutorial for quick pie crust in a food processor.
- What are the best apples for baking? Granny smith, jonagold, jonathan, gala, honeycrisp, and pink lady/cripps pink are all great varieties to choose from. They’re tart and firm and will hold up well to baking.
- How do you know when it’s done? There are two things to look for, the crust should be golden brown and the filling should be visibly bubbling through the center. That means that the filling has reached the correct temperature to thicken properly.
- To reheat the galette before serving: Cover with foil and warm in a 350°F oven for 20-30 minutes. Remove the foil for the last few minutes to get the crust crisp again.
- How to store this galette: This galette will keep best in the fridge covered with plastic wrap for several days (if it lasts that long!).

- One single-crust pie crust recipe
- 2 (255 grams) large peaches , peeled and thinly sliced
- 2 (170 grams) large apples , peeled and thinly sliced
- ¼ cup (50 grams) granulated sugar
- 1 tablespoon all-purpose flour
- ¼ teaspoon ground cinnamon
- 1 large egg + 1 tablespoon water , for egg wash
Optional topping:
- 1 tablespoon granulated sugar
- ½ teaspoon ground cinnamon
- Ice cream or whipped cream , for serving
Instructions
- Preheat oven to 400°F. Line a sheet pan with parchment paper.
- On a lightly floured surface, roll out the pie crust to a rough 12 inch circle and transfer to the prepared sheet pan.
- Toss together the peaches, apples, sugar, flour, and cinnamon. Dump into the center of the circle, leaving a 2-inch edge.
- Fold the edges of the pie crust up and over the filling. Brush crust with egg wash. If desired, sprinkle crust with cinnamon sugar topping.
- Bake 30-35 minutes until golden brown. Serve hot or at room temperature. Top with ice cream or whipped cream, if desired.

- Feel free to use your favorite pie crust recipe. Store-bought pie crust is also a great time-saving option!
- Since apples are naturally more firm than peaches, try to use peaches that are still a little firm for even baking and texture.

I made this recipe tonight for guests. I prepared it prior to their arrival and baked it while we ate dinner. We served it warm with whipped cream. It was fabulous. I made it with fresh apples-sliced thin with the peels on, drained canned peaches and frozen blueberries. I used more fruit than listed. It was mounded up. Â I also put some apricot preserves on top of the fruit before baking. It was beautiful! Super easy.Â
