Marinated Cheese Appetizer

The perfect appetizer for holiday parties! Serve with toasted bread or crackers.

Ingredients
 

  • 2 lbs assorted cheeses , in bite-sized slices or cubes
  • ¼ cup olive oil
  • 2 tablespoons balsamic vinegar
  • ¼ cup jarred roasted red peppers , chopped
  • ¼ cup olives (such as kalamata or green olives) , chopped
  • 3 green onions , chopped
  • 2 garlic cloves , minced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 1 teaspoon coarse salt
  • ½ teaspoon ground pepper
  • Crackers or toast , for serving

Instructions
 

  • Arrange cheese slices in a ring on a large round platter for a wreath shape. If you'd like another shape, feel free to arrange them as desired on any serving platter.
  • In a bowl combine the remaining ingredients to make the topping. Spoon over the cheese slices.
  • Cover with plastic wrap and chill in the fridge for at least 1 hour. Serve with toasted bread or crackers, or as desired.

Notes

  • You can use cheddar, mozzarella, Monterey jack, Gouda, Gruyere, Goat cheese, Cream cheese, etc. Use whatever cheese you like!
  • I prefer to use slices or cubes of harder cheese to make this wreath, but you can carefully slice softer cheeses too. Or leave them whole and have guests scoop servings up (it won’t be in a wreath shape though). I used cheddar cheese and mozzarella cheese for the appetizer pictured in this post.
  • It keep very well, up to about 24 hours, though I do recommend serving it the day it’s assembled so the cheese looks fresh. If you want to prep farther in advance, you can slice cheese and mix the topping up to 2 days before, and then assemble them a few hours before serving.
