Molasses Spice Snowball Cookies

These molasses spice snowball cookies are such a fun and delicious twist on the holiday classic! With a tender, buttery texture, plenty of chopped nuts, and dusted in a snowy layer of powdered sugar. 

Ingredients
 

  • 1 cup (226 grams) unsalted butter , at room temperature
  • ½ cup (56 grams) powdered sugar
  • ¼ cup (85 grams) molasses
  • 1 teaspoon vanilla extract
  • 2 cups (260 grams) all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • 1 ½ cup (180 grams) pecans or walnuts , finely chopped

For rolling:

  • 1 cup (113 grams) powdered sugar
  • 1 teaspoon ground cinnamon

Instructions
 

  • Preheat oven to 350°F. Line a sheet pan with parchment paper or a silicone baking mat.
  • In the bowl of a stand mixer fitted with a paddle attachment, or in a bowl with a hand mixer, beat the butter and powdered sugar together on medium high speed until light and creamy, about 3-4 minutes. Add the molasses and vanilla extract, mixing after each, and scraping down the bowl as needed.

  • Add the flour, salt and spices and mix until dough starts to come together. Add nuts and mix until just combined. (Dough will seem dry and crumbly, but should hold together when pressed.)
    2 cups (260 grams) all-purpose flour, ½ teaspoon salt, ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger, ¼ teaspoon ground cloves, 1 ½ cup (180 grams) pecans or walnuts
  • Portion the dough into tablespoons (a small cookie scoop is the perfect size) and roll into a ball, then place on the prepared baking sheet about 2 inches apart. Bake until cookies just begin to turn golden brown on the bottom, about 9-10 minutes.
  • Combine powdered sugar and cinnamon in a bowl. Let cookies sit on the pan to cool for about 10 minutes, then roll in the powdered sugar mixture. Let them cool completely and then roll in mixture again, if desired.

Notes

  • I like to bake small tablespoon-sized cookies for a more pop-able experience, but you can also bake into medium 1½ tablespoon-sized cookies. Yields about 30 cookies, adjust baking time to 14-16 minutes.
