Ingredients

  • 1 tablespoon olive oil
  • ½ onion , chopped
  • 3 cloves garlic , minced
  • 28 can crushed tomatoes (use traditional or Italian-style)
  • 1 tablespoon fresh herbs such as rosemary, thyme, basil, oregano (or 1 teaspoon dried such as Italian seasoning)
  • 1 tablespoon light or dark brown sugar (optional)
  • Salt and pepper , to taste

Instructions

  • Add olive oil to large pot or skillet over medium heat. Add onions and cook for a few minutes until softened. Add garlic and cook for 1 minute more.
  • Add crushed tomatoes, herbs, brown sugar if using, and salt and pepper.
  • Simmer on medium low heat for at least 10 minutes, or up to 1 hour if you have the time.
  • Taste and adjust seasonings as needed.
  • This sauce is slightly chunky, if you prefer a smooth sauce blend with an immersion blender or blender.
  • Use sauce immediately or store in the fridge for up to 1 week or in the freezer for a month or more.
