Ingredients

  • 1 ½ cup granulated sugar
  • 1 ½ cup unsalted butter , at room temperature
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon almond extract
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar

Instructions

  • Cream together the butter and sugar in the bowl of an electric mixer until light and fluffy. Add the eggs one at a time, mixing after each. Add the vanilla and almond extracts.
  • In another bowl, sift together the flour, salt, baking soda, and salt. Add to the wet mixture and mix until combined. Wrap the dough in plastic wrap and chill for at least 2 hours.
  • When ready to bake, preheat oven to 350°F and line sheet pans with parchment paper.
  • Allow the dough to rest at room temperature for a few minutes and then roll out to about ¼ inch thick. Cut into desired shapes. Sprinkle with sugar, if desired, and place on a sheet pan in the freezer for about 30 minutes.
  • Bake for 10-12 minutes or until edges just start to turn brown. Cool in the pan for 5 minutes and then transfer to a rack to cool completely.
