Taco Sloppy Joes

Sloppy Joes with a fun taco twist are a perfect crowd pleasing meal!
Sloppy Joe Beef:
- 2 lbs ground beef
- 1 green pepper , chopped
- 1 small onion , chopped
- 1 jalapeno , chopped
- 1 cup red enchilada sauce (about 1 10-oz can)
- 1 cup water
- 2 tablespoons taco seasoning
- 1 tablespoon brown sugar
- Salt and pepper , to taste
For assembly:
- 6 buns
- Shredded cheddar cheese
- Shredded lettuce
- Diced tomatoes
- Diced avocado
- Sour cream
- Fresh cilantro
- Salsa
In a large pot set over medium high heat, brown the beef and season lightly with salt and pepper. Drain off any fat.
Add the green pepper, onion, jalapeno, enchilada sauce, water, taco seasoning and brown sugar and stir until combined.
Bring to a boil, then reduce heat and simmer until sauce is reduced and thickened and pepper and onion are softened, about 15 minutes, stirring frequently.
Serve sloppy joes on the buns and top as desired.
NOTES
- For extra heat, add 1/4-1/2 teaspoon cayenne pepper.
