Coffee House Trail Mix

 An energy snack mix filled with nuts, seeds, fruit, coconut, and chocolate.

Ingredients

  • 1 cup whole almonds (142 grams)
  • 1 cup shelled pecans (113 grams)
  • 1 cup raw pumpkin seeds (200 grams)
  • 1 cup dried cherries (140 grams)
  • 1 cup dried blueberries (156 grams)
  • 1 cup coconut , see Note (113 grams)
  • 1 cup chocolate covered coffee beans (160 grams)

Instructions

  • Combine all ingredients and store in an airtight container for up to 1 month.

NOTES

  • I like to use roasted coconut chips that you can find in well-stocked grocery and specialty stores. (I get mine at Trader Joes) They're crunchy and a lit bit sweet. But shaved or flaked coconut (either sweetened or unsweetened) will work too.
  • Makes 7 cups trail mix.
