Meatloaf and Potatoes Sheet Pan Dinner

Make tonight's meal a breeze with this one-pan meatloaf and potato dinner!
My favorite meatloaf and roasted potatoes cooked together on 1 pan!

For the meatloaf:

  • 1 lb ground beef
  • 1/2 cup finely chopped onion
  • 1 large egg
  • 1/3 cup old-fashioned rolled oats
  • 1/4 cup ketchup
  • 1 teaspoon ground mustard
  • 2 tablespoons light or dark brown sugar
  • 1 tablespoon fresh chopped sage , or 2 teaspoons dried sage
  • 1 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper

For the meatloaf topping:

  • 1/3 cup ketchup
  • 1 tablespoon light or dark brown sugar
  • 1/2 teaspoon dry mustard

For the potatoes:

  • 1 lb yukon gold potatoes , cut into 1-inch chunks
  • 2 tablespoons olive oil
  • Salt and pepper


  • Preheat oven to 375°F. Grease a sheet pan with nonstick cooking spray.
  • In large bowl, combine the ground beef, onions, egg, oats, ketchup, dry mustard, brown sugar, sage and salt and pepper. Use a fork and then your hands to gently bring it together. Don't overmix or the meatloaf will become tough.
  • Form the mixture into a log about 4-5 inches thick on the sheet pan.
  • Whisk the ketchup, brown sugar, and dry mustard together to make the topping. Spread on top of the meatloaf.
  • Bake for 10 minutes.
  • Meanwhile, toss the potatoes with the olive oil and plenty of salt and pepper.
  • Spread the potatoes out onto the sheet pan around the meatloaf.
  • Bake for another 25-30 minutes until potatoes are tender and an instant-read thermometer inserted into the center of the meatloaf registers 165°F.
  • Cut meatloaf into slices and serve with potatoes.
