Ingredients
1lbcarrots, sliced into 1 cm coins
3 tablespoonbutter
1/4cuppacked light or dark brown sugar
1/2teaspooncoarse salt
1/4teaspoonred pepper flakes(optional)
1/2cup water
Fresh ground black pepper, to taste
Chopped parsley or carrot tops, for garnish (optional)
Instructions
Add carrot coins, butter, brown sugar, salt, red pepper flakes, and water to a medium saucepan.
Bring to a boil, stirring to dissolve sugar.
Once boiling, reduce heat to medium low and simmer for about 10 minutes, until carrots are al dente and most of the liquid is reduced to a sauce. Stir occasionally as needed.
Top with fresh ground black pepper and parsley or carrot tops, if using. Serve immediately.
Notes
NOTE: This recipe also works with baby carrots. Increase cook time to 12-15 minutes depending on their size.
