Ingredients
Raspberry simple syrup (makes 1 cup):
3/4cupgranulated sugar
3/4cupwater
6ouncesraspberries(1 1/2 cups, 1 dry pint), fresh or frozen
Raspberry Mojito:
6fresh mint leaves
Juice of 1 lime
1/4cupwhite rum
1/4cupraspberry simple syrup
1/2cupice
Soda water
Additional mint and raspberries for garnish, optional
Instructions
To make the raspberry simple syrup:
Combine the sugar, water, and raspberries in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally.
Strain to remove raspberry seeds and let cool completely.
Raspberry simple syrup can be stored in the fridge for a week or more.
To make a mojito cocktail:
In a highball glass, add mint leaves, lime juice, rum and simple syrup and muddle with the handle of a wooden spoon, smashing mint leaves to release flavor.
