This refreshing mojito cocktail made with rum, mint, lime, and fresh raspberries is perfect for summer sipping!
Raspberry simple syrup (makes 1 cup):
- 3/4 cup granulated sugar
- 3/4 cup water
- 6 ounces raspberries (1 1/2 cups, 1 dry pint), fresh or frozen
- 6 fresh mint leaves
- Juice of 1 lime
- 1/4 cup white rum
- 1/4 cup raspberry simple syrup
- 1/2 cup ice
- Soda water
- Additional mint and raspberries for garnish , optional
To make the raspberry simple syrup:
Combine the sugar, water, and raspberries in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally.
Strain to remove raspberry seeds and let cool completely.
Raspberry simple syrup can be stored in the fridge for a week or more.
To make a mojito cocktail:
In a highball glass, add mint leaves, lime juice, rum and simple syrup and muddle with the handle of a wooden spoon, smashing mint leaves to release flavor.
Add ice and enough soda water to fill the glass.
Garnish as desired and serve immediately.
