Ingredients

Raspberry simple syrup (makes 1 cup):

  • 3/4 cup granulated sugar
  • 3/4 cup water
  • 6 ounces raspberries (1 1/2 cups, 1 dry pint), fresh or frozen

Raspberry Mojito:

  • 6 fresh mint leaves
  • Juice of 1 lime
  • 1/4 cup white rum
  • 1/4 cup raspberry simple syrup
  • 1/2 cup ice
  • Soda water
  • Additional mint and raspberries for garnish , optional

Instructions

To make the raspberry simple syrup:

  • Combine the sugar, water, and raspberries in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally.
  • Strain to remove raspberry seeds and let cool completely.
  • Raspberry simple syrup can be stored in the fridge for a week or more.

To make a mojito cocktail:

  • In a highball glass, add mint leaves, lime juice, rum and simple syrup and muddle with the handle of a wooden spoon, smashing mint leaves to release flavor.
  • Add ice and enough soda water to fill the glass.
  • Garnish as desired and serve immediately.
