I guess there’s some major sporting event happening this weekend? Huh.

We don’t have cable and I couldn’t care less about football, so there’s a good chance I won’t see any of the game. Regardless, I’d hate to pass up an opportunity to overindulge on snacks, appetizers and other sorts of game day food.

Sloppy joes are one of those beloved childhood meals that I hope I never outgrow. They’re perfect for feeding any crowd, whether you’ve got a large family gathering or a living room filled with rowdy sports fans.

And these sloppy joes are sure to be extra popular because they’ve got a fun taco twist— jalapenos, enchilada sauce, and taco seasoning cooked right in with the meat, plus so many fun taco toppings! Use whatever you like, I added lettuce, tomatoes, cheese, sour cream and cilantro and they were perfect.

Serve the sandwiches next to a big bowl of tortilla chips and plenty of salsa and you’ve got yourself a slam dunk. Or a home run. Or a touchdown. Or, whatever. Just make ’em, okay?

Taco Sloppy Joes

Sloppy Joes with a fun taco twist are a perfect crowd pleasing meal!

Ingredients
 

Sloppy Joe Beef:

  • 2 lbs ground beef
  • 1 green pepper , chopped
  • 1 small onion , chopped
  • 1 jalapeno , chopped
  • 1 cup red enchilada sauce (about 1 10-oz can)
  • 1 cup water
  • 2 tablespoons taco seasoning
  • 1 tablespoon brown sugar
  • Salt and pepper , to taste

For assembly:

  • 6 buns
  • Shredded cheddar cheese
  • Shredded lettuce
  • Diced tomatoes
  • Diced avocado
  • Sour cream
  • Fresh cilantro
  • Salsa

Instructions
 

  • In a large pot set over medium high heat, brown the beef and season lightly with salt and pepper. Drain off any fat.
  • Add the green pepper, onion, jalapeno, enchilada sauce, water, taco seasoning and brown sugar and stir until combined.
  • Bring to a boil, then reduce heat and simmer until sauce is reduced and thickened and pepper and onion are softened, about 15 minutes, stirring frequently.
  • Serve sloppy joes on the buns and top as desired.

  • For extra heat, add 1/4-1/2 teaspoon cayenne pepper.
