I feel like I’ve loved strawberry shortcake my whole life. It was always one of my most favorite summertime desserts growing up and to me nothing quite says summer like a paper bowl filled with yellow cake, whipped cream, and sliced strawberries. One bite and I’m transported back in time: I’m in my grandparents’ back yard where my cousins and I are playing tag and climbing trees while our parents play a game of croquet. So long ago! Since I’m the type of gal that can’t leave things well enough alone, I’ve tried to create new twists on the classic strawberry shortcake. I’ve roasted the strawberries, turned it into a healthy breakfast, and even made it with peaches— all winners, by the way.

This year I created this show-stopping layer cake for my friends at Go Bold With Butter. The cake is a simple homemade yellow cake (2 layers sliced in half to make 4 impressive layers) and the filling is a sweetened whipped cream with fresh strawberries. So easy! But when you assemble it all like this it really looks beautiful and special.
