One of my favorite things about summer is sharing drinks with friends out in the backyard. Friends gathered together, the warm summer evening temperatures, strings of twinkly lights, and cold cocktails in hand— I love it all so much!

Mojitos are such a classic summer drink and it’s one I’ll serve often over the next few months. For this variation I added fresh raspberries to the classic lime and mint combination, and it’s even more refreshing and summery than the original!

How to make a raspberry mojito

Mojitos are so simple to mix up! Here’s what goes into this raspberry mojito cocktail:

  • Fresh mint leaves
  • Freshly squeezed lime juice
  • Homemade raspberry simple syrup— just 3 ingredients and 5 minutes to make!
  • White rum
  • Soda water
  • Ice

And here’s how you make it: Add the mint, lime juice, raspberry syrup, and rum to a tall (or highball [1]) glass and smash it all together. This is called “muddling”. Smashing the mint leaves releases their oils and refreshing flavor. Then all that’s left to do is add ice and soda water. Garnish with a few more mint leaves and fresh raspberries— and enjoy!

How to make this mojito without alcohol

Mojitos are one of the easiest cocktails to serve minus the alcohol. Simply leave out the rum and replace it with more soda water, and you essentially have a really refreshing raspberry-lime homemade soda that both kids and adults will love.

Raspberry Mojito

This refreshing mojito cocktail made with rum, mint, lime, and fresh raspberries is perfect for summer sipping!

Ingredients:

Raspberry simple syrup (makes 1 cup):

  • 3/4 cup granulated sugar
  • 3/4 cup water
  • 6 ounces (1 dry pint, 1 1/2 cups) raspberries, fresh or frozen

Raspberry Mojito:

  • 6 fresh mint leaves
  • Juice of 1 lime
  • 1/4 cup white rum
  • 1/4 cup raspberry simple syrup
  • 1/2 cup ice
  • Soda water
  • Additional mint and raspberries for garnish (optional)

Directions:

To make the raspberry simple syrup:

  1. Combine the sugar, water, and raspberries in a small saucepan and bring to a boil. Reduce heat and simmer for 5 minutes, stirring occasionally.
  2. Strain to remove raspberry seeds and let cool completely.
  3. Raspberry simple syrup can be stored in the fridge for a week or more.

To make a mojito cocktail:

  1. In a highball glass, add mint leaves, lime juice, rum and simple syrup and muddle with the handle of a wooden spoon, smashing mint leaves to release flavor.
  2. Add ice and enough soda water to fill the glass.
  3. Garnish as desired and serve immediately.
Notes:
  • This recipe makes just 1 cocktail, but it can easily be scaled to make as many as you'd like!
  • To make this a non-alcoholic beverage, omit rum and increase amount of soda water.
