Meatloaf and Potatoes Sheet Pan Dinner

Make tonight’s meal a breeze with this one-pan meatloaf and potato dinner!

My favorite meatloaf and roasted potatoes cooked together on 1 pan!

I am not at all ashamed to admit that I love meatloaf. There, I said it! I don’t know how it got such a bad rap, but it’s one of my favorite comfort foods.

And my mother-in-law makes the BEST meatloaf ever. It’s a classic recipe flavored with a heavy dose of ketchup and dry mustard, with a few not so common twists like sage and rolled oats. In my recipe here I’ve adapted it slightly, scaled it down, and roasted it alongside potatoes to make it a complete meal.

My favorite meatloaf recipe

There’s nothing fancy or complicated in this meatloaf. Here’s what you’ll need:

  • Ground beef (I like to use 85% lean 15% fat for great flavor)
  • Finely chopped onion
  • 1 large egg
  • Old-fashioned rolled oats
  • Ketchup
  • Ground mustard
  • Light or dark brown sugar
  • Fresh (my preference) or dried sage
  • Salt and pepper

Make it a complete meal on one pan

There’s plenty of space on the sheet pan around the meatloaf for 1 lb of chopped potatoes to roast along with it! And if you want to add some other veggies, add 1-2 cups of whatever along with the potatoes, such as:

  • Green beans
  • Carrots
  • Broccoli
  • Butternut squash

Or serve the meatloaf and potatoes with a big salad [1]!

Meatloaf and Potatoes Sheet Pan Dinner

Make tonight's meal a breeze with this one-pan meatloaf and potato dinner!

Ingredients:

For the meatloaf:

  • 1 lb ground beef
  • 1/2 cup finely chopped onion
  • 1 large egg
  • 1/3 cup old-fashioned rolled oats
  • 1/4 cup ketchup
  • 1 teaspoon ground mustard
  • 2 tablespoons light or dark brown sugar
  • 1 tablespoon fresh chopped sage, or 2 teaspoons dried sage
  • 1 teaspoon coarse salt
  • 1/2 teaspoon ground black pepper

For the meatloaf topping:

  • 1/3 cup ketchup
  • 1 tablespoon light or dark brown sugar
  • 1/2 teaspoon dry mustard

For the potatoes:

  • 1 lb yukon gold potatoes, cut into 1-inch chunks
  • 2 tablespoons olive oil
  • Salt and pepper

Directions:

  1. Preheat oven to 375°F. Grease a sheet pan with nonstick cooking spray.
  2. In large bowl, combine the ground beef, onions, egg, oats, ketchup, dry mustard, brown sugar, sage and salt and pepper. Use a fork and then your hands to gently bring it together. Don't overmix or the meatloaf will become tough.
  3. Form the mixture into a log about 4-5 inches thick on the sheet pan.
  4. Whisk the ketchup, brown sugar, and dry mustard together to make the topping. Spread on top of the meatloaf.
  5. Bake for 10 minutes.
  6. Meanwhile, toss the potatoes with the olive oil and plenty of salt and pepper.
  7. Spread the potatoes out onto the sheet pan around the meatloaf.
  8. Bake for another 25-30 minutes until potatoes are tender and an instant-read thermometer inserted into the center of the meatloaf registers 165°F.
  9. Cut meatloaf into slices and serve with potatoes.
