Your summer needs this refreshing cherry limeade granita, trust me on this one. Before the season ends, promise me you’ll make it. A granita is kind of like a snow cone, with chunks of flavorful ice that are perfect for a hot summer’s day. Also, it’s easy. All you need is a freezer and a little patience.

I’ve long been a big fan of cherry limeades from Sonic Drive In, but now that I’ve made the real deal I don’t know if I can go back to their version. This recipe uses real cherries and lime juice, a little simple syrup, and some club soda. You could certainly pour it over ice and enjoy it straight away, and in fact you’re probably going to be tempted to do so. But it’s worth the wait to hold out for the granita.

When doing some light research for this recipe I found a lot that made cherry limeade with maraschino cherries, but since this is the summer that I am obsessed with bing cherries and always have a bag in my fridge, naturally I decided to use them instead. Definitely the hardest part of this recipe is pureeing and straining the cherries, but even that isn’t difficult. And once you’ve had a spoonful of this granita, you’ll be so glad you did.

Cherry Limeade Granita

An easy frozen treat version of a favorite summer drink.

Ingredients

  • 2 cups sweet cherries , pitted (385 grams)
  • cup granulated sugar (133 grams)
  • cup water (157 ml)
  • ½ cup fresh lime juice (118 ml, approximately 3-4 limes)
  • 2 cups club soda , chilled (500 ml)

Instructions

  • In a food processor or blender, puree the cherries until smooth. Strain the liquid with a mesh strainer. Set aside.
  • In a small saucepan, combine the sugar and water. Bring to a boil over medium high heat, stirring to dissolve the sugar. Remove from heat and combine with the cherry juice and lime juice. Chill mixture completely.
  • In a 11x13 inch dish, combine the cherry and lime mixture with the club soda. Increase or decrease the amount of club soda to your taste. Place in the freezer. After 1 hour, use a fork to break up all frozen parts. Repeat this process every hour until all of the mixture is frozen, about 4 hours.
