Last week I came down with a terrible head cold. It wasn’t very much fun and totally ruined my weekend. I had to stay home from work on Friday and I got bored, so I made cookies!

Cookie dough

There’s nothing like warm cookies fresh from the oven to make you feel better. And these were really good, you really can’t go wrong with putting oats and chocolate together in a cookie.

You can’t go wrong with cookies in general. But these, these are the perfect treat on an autumn afternoon.

Oatmeal Chocolate Chunk Cookies
Adapted from The Gourmet Cookbook
Makes 2 dozen cookies

2/3 cup (10 tablespoons) unsalted butter, at room temperature
1/3 cup brown sugar
1/4 cup sugar
1 egg
1/2 teaspoon vanilla
3/4 cup all-purpose flour
3/4 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
1 3/4 old-fashioned oats
1 cup semi-sweet chocolate chunks

Preheat the oven to 375 degrees F and line a baking sheet with parchment paper.

In a medium bowl, mix together the flour, cinnamon, baking soda, salt and oats. Set aside.

In the bowl of an electric mixer, cream the butter and sugar by beating it on medium high until light and fluffy. Add the egg and vanilla and mix to combine. Add the oat mixture and mix until just combined. Add the chocolate chunks.

Spoon by the tablespoon onto the prepared baking sheet. Bake until golden brown, about 10-12 minutes. Cool on a wire rack.

These look great! I’m not a big fan of oatmeal raisin cookies so I always sub out the raisins with chocolate chips, but I have yet to find a recipe I really like–this recipe looks like it might just be the one I have been looking for :)

Made these yesterday and they are SO good! I tried them while still warm and I didn’t think that much of them, but once they were completely cool they were like a totally different cookie. This recipe is definitely a keeper.
