Classic Cannoli Pastries

Technically there was no baking this month, just a lot of deep frying. Maybe that’s why this month’s challenge isn’t one of my favorites. But the cannoli did taste great and I’m glad that I had the opportunity to try something new.
The cannoli dough is very different from other doughs in that it has a bit of cinnamon, some cocoa powder, and wine in it. Once the cannoli were deep fried I dipped them in chocolate and pieces of pistachio nuts. The filling is made of sweetened ricotta cheese, chocoate, pistachios, and orange zest. The end result is a treat that is packed with flavor. The only change I think I would make if I were to do these again, is to reduce the amount of orange zest as it overpowered a lot of the other flavors.
